BROWNIE (oreos o nueces)





Receta de Lorraine Pascale, una magnifica chef que podemos ver en Canal Cocina. Procuro tener grabados todos sus programas porque me encanta todo lo que hace, de una manera sencilla y a alcance de todos.

Este brownie lo prepara con galletas oreo, pero las he sustituido por nueces, aunque con las galletas está igualmente exquisito.

Ingredientes:

-165 gr. de mantequilla (la tengo fuera del congelador media hora antes ahora en verano)
-165 gr. de azúcar morena
-50 gr. o aproximadamente dos cucharadas soperas de harina colmadas.
-1 cucharada sopera de cacao sin azúcar (yo utilizo la marca Valor)
-200 gr. de chocolate negro para fundir
-3 huevos y 2 claras (estas las pongo pasteurizadas)
-1 cucharada de postre de vainilla líquida o mejor una vaina.
-80 gr. de nueces o varias galletas oreo, tu eliges.

Es fácil.

En un bol pones la mantequilla y al microondas unos 30 segundos (la mantequilla debe quedar con trozos sin derretir), entonces le añado el chocolate fondant a trozos, y otra vez al microondas 30 segundos. Lo saco y le doy vueltas a la mezcla con un tenedor. Si veo que le falta por derretir lo pongo 20 segundos mas. Procuro no calentar en exceso y que con el calor ya es suficiente para que se derrita. Vamos, que es mejor que lo hagas a intervalos cortos. Una vez derretido y bien mezclado (te quedará un chocolate muy brillante, hay que remover un rato), lo apartas.

En otro bol, pongo los huevos y las claras, y con varillas eléctricas, bato hasta que se forma algo de espuma, entonces echo la mitad del azúcar, bato y cuando aumenta de tamaño, echo el azúcar restante y otra vez bato hasta que aumenta el volúmen considerablemente.

En éste punto vierto la mezcla de chocolate con mantequilla. Y remueves con una espátula. Cuesta que la mezcla quede amalgamada. La textura debe ser cremosa y el color de un chocolate intenso, hasta que no lo consigas así, no pares de remover. Y siempre con movimientos envolventes de abajo/arriba.

Le toca el turno a la harina mezclada con el cacao, que debe estar tamizada. Importante. 

Y vuelves a remover lentamente y con paciencia. 

Echas las nueces o las oreos, lo que elijas,  a trozos.

Lo pasas al molde elegido. Para éstas medidas, yo utilizo un molde cuadrado de 24 cm. y no se ha roto la capa que se forma por arriba. La primera vez utilicé uno de 18 cm. y la capa crujiente y riquísima se abrió bastante, así que luego usé uno mas grande y aguantó bien. 
    
Aunque es normal que se abra un poco. 

El tiempo de horno. Lo puse en el segundo piso del horno (empezando por abajo), encendido arriba y abajo a 175º y durante 35 minutos. Si sale una pizca manchado de chocolate no importa, queda mas jugoso. Piensa que cuando se enfría, también se seca más. Si lo dejas en el horno en exceso no te quedará jugoso y le quitas la gracia al brownie. 



  Una receta fabulosa. Lo acompañas con un vaso de leche fría o con helado de vainilla o con un rosetón de nata, mmmm, buenísimooo.

Ingredients:

3 pounds of plums

2 pounds of peaches

3 sweet red peppers, diced

4 large cloves garlic, minced

1 onion, minced

4 cups cider vinegar

a .5 cups of water

.5 cups cooking sherry

1 teaspoon of soy sauce

1 .5 Cup of white sugar

a .5 Cup of light brown sugar, packed

1 tbsp ground ginger

a tablespoon of pickling salt

1 tablespoon dry mustard powder

one teaspoon of cayenne pepper

a teaspoon of cinnamon

1 teaspoon cardamom

HOW TO:

Steam and Blanche the plums and peaches for about 2 minutes, making only 1 pound at a time. Do not overcrowd your pan. Skin and remove the pits.

Another large kettle, you can combine all ingredients. Bring the kettle to a boil and then lower the heat to simmer for another 1 .5 to 2 hours, until the syrup is thick enough and the fruit falls apart. Please stir them frequently to avoid scalding or burning.

Pour the puree into a .5 litre hot jars leaving HeadSpace of .5 inch and then seal and process in a boiling water bath for 10 minutes. Remove the jars from the bath and cool off. When cold out, you can store them in freezers and their last until their end to the last drop.

2. CHINESE SZECHUAN STIR FRY sauce:

Ingredients:

sesame oil a .5 teaspoon

.5 teaspoon chopped fresh ginger

.5 teaspoon chopped garlic

1/3 cup chicken broth

2 whole anise stars

1 .5 teaspoon red wine vinegar

a tablespoon of soy sauce

.5 teaspoon salt

1 teaspoon hoisin sauce

1/8 teaspoon Tabasco sauce

1/8 teaspoon red pepper, crush them in bits

.25 teaspoon pepper

1/8 teaspoon 5-spice powder

a tablespoon of water with dissolved 2 tsp cornstarch

HOW TO:

Heat the oil in a small saucepan. Add ginger and garlic and saute for about 12 minutes, until softened but not brown. In another bowl, combine remaining ingredients, saving the cornstarch mixture for later. Add them to the pot and bring to a simmer, covered, for about 10 minutes. Remove the star anise. Stir the cornstarch mixture and boil for another 1-2 minutes. Taste and add more Tabasco. This is now ready for any stir fry cooking.
